I can reply in the wee hours of the morning to emails most days.

Family friendly, no fancy name, no glitter or offensive graphics, just great food

prepared on your site to your specifications, your desired menu. Its all about the food, your friends, colleagues

friends and/or employees, and YOU enjoying YOUR event!                                                                                                      

You can specify any meal or I can put together a package for you.

I will cater the entire event or just cook your main meat products.

Drop off of meats or entire meal also an option!

 Food is prepared on one of my reverse flow smoker's - competition style units

with a 400 + pound capacity smoking / roasting / BBQ area, [ depending on cut.]

and wood fired grills. Were not talking Daddy's Webber here!

Low temperatures and slow cooking allow flavor to develop in a natural, delicious
way. The result is the most tender and juicy meat, every time.
Pork shoulders cooked at low heat melt in your mouth!"



All in one unit with smoker and basic kitchen - this is a Lang smoker mounted.

Unit is 34 feet long with deep fryers, flat top and other cooking capabilities.

Generator if power not available, and running hot and cold water for cleanup -

 convenient for both you and me! 

For smaller venue's, tight area's and drop off's we have another

competition / vending trailer available which can handle up to 750 pounds of meats!

My array of cooking / smoking units continues to grow / change

    to meet our growing demand! 



 Either unit can handle feeding a couple hundred people meats and hot side dishes.

  No gas grills here! Its about the flavor of charcoal and mixed hardwoods

                            [ Apple, Cherry, Oak, Hickory, Maple ]

                     If you have a specific wood flavor you are looking for,

                              I will do my best to accommodate!

 Pork: Whole hog - racer style or butterflied, pulled pork [ shoulders] ,

sausages, whole loins, select cuts, or a combo of all.

Slow roasted for 6 - 24 hours depending on size and cut.      


 72 pound hog, surrounded by pork shoulders and beef briskets!



 Poultry: Whole, half, pieces or pulled pulled chicken, whole turkeys ,

deep fried and then grilled wings that are a hit everywhere I have served them.

84 half chickens is what the Lang is rated to roast at a time -

I feel confident we can do more if needed!


 Beef: Up to: 20 pound Briskets, 30 pound Chuck Roasts,

                         whole tenderloins, ribs, steaks, even smoked burgers!

Your menu! - Chose a combination of the above, or your specific foods,

including Brats. burgers, Hot Dogs, Polish or Italian sausage chicken tenders etc.

Grilled or Smoked! My suppliers have most common meats available fresh - usually

available for even a last minute event.

Whole Hogs require 1 week minimum, sometimes longer to procure Hog,

but even last minute, you can always ask, I will do what I can!


Sides: Cowboy style beans loaded with pork pleases

even those who dont care for baked beans!

Grilled or sauteed onions, peppers, etc for your main dish, Smoked Shells-n-Cheese,

Green Beans Almondine, Garlic Mashed Red Potatoes, Potato salad, noodle salads,

coleslaw etc! Most dishes made on site while the meat is slow roasting - if you have

a specific ethnic or family recipe or favorite, I will make it to the best of my ability,

keeping in mind, nobody can make it as good as Momma did [or as cost effectively]

but I am willing to try! Take a look at my "Menu " page to see what I have done for

serving pans, serving spoons, tongs etc. unless requested otherwise -

No dining tables and chairs available through me at this time, but can arrange
